No-Fuss Dairy-Free Pancakes

Ingredients

  • 130g plain flour
  • 1 large egg
  • 300ml of almond or coconut milk (or your favourite dairy-free alternative)
  • 1tbsp sugar
  • 1/2tsp salt
  • 1tsp avocado or canola oil – with extra to fry

Method

  1. Sift together the flour, sugar and salt – forming a well in the centre of the bowl.
  2. In a separate bowl, mix together the egg, milk and oil.
  3. Pour the wet mixture into the centre of the dry ingredients and mix until combined.

Top tip: Don’t over-mix your batter as you may end up with a chewier texture.

  1. Lightly coat your frying pan with oil and put on a medium heat. Once hot, add a ladle-full of batter.
  2. When bubbles form on the top of the pancake, flip it over. Cook until golden brown on each side.

Breadwinning Gluten-Free Pancakes

Ingredients

  • 150g gluten-free flour
  • 1 large egg
  • 275ml milk
  • 1tsp sugar
  • Oil or butter, for frying

Method

  1. Mix your flour and sugar in a bowl, leaving a well in the middle.
  2. Crack the egg into the hole and add a third of the milk.
  3. Whisk the mixture together to make a paste, and then add another third of the milk – gradually adding in the rest of it once the mixture is lump free.

Top tip: Leave your mixture to rest for around 30 minutes to let it get a little thicker. Just give it a final stir before using it.

  1. Heat a non-stick pan and coat with a light layer of oil. Once hot, add your preferred amount of batter to the pan to cook.
  2. Once bubbles start to form, flip your gluten-free pancake.
  3. Cook until golden brown on each side.
