What you'll need
4 large baking potatoes
8 -10 slices bacon, fried crisp and chopped
1 tub of cream cheese
2 tablespoons sour cream
4 tablespoons butter, softened
6 spring onions, chopped
50g grated cheddar
Salt & Pepper (to taste)
Method
Microwave potatoes for 10 minutes or until soft
Cut the potatoes in half and scoup out the middle
Add the potato to a bowl and mix in the bacon, cream cheese, sour cream, butter, spring onions, salt and pepper
Scoup the potato mixture back into skins and sprinkle over the grated cheese
Bake in the oven for 20 minutes at 180 or until golden
