Roasted Pineapple with Black Pepper

What you'll need
- 1 large fresh pineapple cut into rings
- Half tsp chilli flakes
- Half tsp cracked black pepper
- Half tsp vanilla extract
- 30g coconut oil melted
- 100g demerara sugar
- 150ml Alpro plain with coconut yogurt
Method
- Preheat oven to 160C
- Place all the ingredients (except yogurt) into a bowl and mix gently to combine, then tip onto a roasting tray
- Roast for 30 minutes, every 10 minutes use the juices in the tray to baste the pineapple
- Serve warm straight from the oven, with cold coconut yogurt
