
• 5 x eggs
• 300g cheddar cheese, grated
• 1 garlic clove, grated
• 15g parmesan
• 225g spinach (frozen or fresh)
• 2 x red peppers
• 100g of cherry tomatoes (or 1 x can drained of sauce)
• Heat oven to 190ºC. Line a baking dish with baking parchment
• Roast peppers for 20 minutes and leave to cool
• Combine the eggs, cheese, garlic, spinach, peppers, nutmeg and season with salt and pepper
• Pour into the baking dish and top with tomatoes
• Bake for 40 minutes until set all the way through
• Cut into wedges and serve hot or cold
