500g The Greengrocer's Maris Piper potatoes, scrubbed and sliced
6 rashers unsmoked back bacon, trimmed and roughly chopped
6 large SPAR enjoy local eggs, beaten
100ml semi-skimmed milk
150g The Greengrocer's Baby Leaf Spinach
50g grated mature cheddar

Method
Boil the sliced potatoes in slightly salted water for 5-10 minutes until just tender. Drain and set aside.
fry the chopped bacon in an oven proof frying pan for 5 minutes until it starts to brown. Remove the excess fat from the pan and set the bacon to one side.
Take a large bowl and add your beaten egg, milk, spinach, cooked potato and bacon in a large bowl and stir to combine.
Pour the frittata mixture into the frying pan & cover with the lid, cook over a medium-low heat for about 10 minutes. Preheat the grill to a medium heat.
Remove from the hob and scatter the grated cheddar over the top. Put the pan under the grill and cook for 10 minutes until set and golden. Serve with salad.
