Asian Chicken Noodle Soup

What you'll need
• 1 tbsp coconut oil
• 1 The Greengrocer’s onion, chopped
• 2 The Greengrocer’s red peppers, chopped
• 1 The Greengrocer’s carrot, cut into thin strips
• 2 The Greengrocer’s garlic cloves, crushed
• 1 tsp chilli powder
• 1/2 tsp cayenne pepper
• 800ml coconut milk
• 720ml chicken stock
• 280g SPAR enjoy local chicken fillets, cooked and shredded
• A handful of The Greengrocer’s fresh coriander, chopped (save some for the garnish)
• 1 tsp lime juice
• 1 packet ramen noodles
• 1 tsp lime zest
Method
1. Heat the coconut oil in a large pot over a medium heat
2. Add the onion, peppers and carrots and cook for 6 – 8 minutes until tender
3. Add the garlic and stir for a further minute
4. Add the chilli powder and cayenne pepper and season with salt
5. Pour in the coconut milk and chicken stock, bring to the boil and then simmer for 5 minutes
6. Add the shredded chicken, coriander, lime juice and ramen noodles and cook until the noodles are soft with a little bit of a bite
7. Garnish with coriander and lime zest
