
• 1 1/2 tbsp SPAR vegetable oil
• 1 The Greengrocer’s onion, peeled and chopped
• 2 The Greengrocer’s garlic cloves, crushed
• 1 tsp fresh ginger, crushed
• 1 tsp ground coriander
• 2 The Greengrocer’s mixed chillies, finely chopped
• 1 bay leaf
• 4 SPAR enjoy local chicken fillets, halved
• 150g smooth peanut butter
• 500ml chicken stock
• 70g The Greengrocer’s cabbage, shredded
• 200g Roma tinned chopped tomatoes
• 1 The Greengrocer’s sweet potato, peeled and chopped into bite-sized chunks
• 146g SPAR peanuts, roughly chopped
1. Heat the oil in a large casserole dish. Add the onion and cook for 5 minutes on a medium heat until soft and golden brown
2. Add the garlic, ginger, coriander, chilli peppers and bay leaf. Season well with salt and pepper and cook for an additional 5 minutes stirring occasionally
3. Increase the heat to high and add the chicken pieces to the spice mix, making sure the chicken is coated in the spices. Cook for 5 minutes, stirring regularly, until the chicken has turned a golden brown and is sealed on the outside
4. Add the peanut butter, stock, cabbage, tinned tomatoes and sweet potato. Bring to the boil then reduce to a low heat before placing the lid on the dish
5. Simmer for 45 minutes, stirring occasionally
6. After 45 minutes, remove the bay leaf and add in the chopped peanuts. Cook for a further 5 to 10 minutes
7. Remove from the heat and serve with rice or a side dish of your choice
