What you'll need
• 1 The Greengrocer’s onion, diced
• 2 cloves The Greengrocer’s garlic, crushed
• 1/2 tbsp smoked paprika
• 1/2 tbsp cumin
• 1/2 tbsp chilli powder
• 400g chopped tomatoes
• 400g chickpeas
• 1 cup leftover turkey
• A handful of The Greengrocer’s fresh coriander, chopped for garnish
Method
1. Add a splash of oil to a large pan on a medium heat
2. Add the onion, garlic and spices and cook for 5 minutes
3. Add the chopped tomatoes and chickpeas and bring to the boil. Reduce and simmer for 10 minutes
4. Add in the leftover turkey and cook for a further 5 minutes
5. Serve in bowls, season with salt and pepper and garnish with fresh coriander
