
Looking to make your own pesto? Give this pesto linguine recipe a try to freshen up your pasta dish. You'll never reach for a jar of pesto again.
Pesto:
2 bunches of fresh basil (aprox 60g)
2 handfuls of pine nuts (aprox 50g)
2 good handfuls of freshly grated Parmesan cheese (aprox 50g)
2 garlic cloves
Olive oil
Pasta:
160g linguine
Add pasta to boiling salted water and cook for the time indicated on pack
Place the basil, pine nuts, parmesan and garlic in a food processor
Add a pinch of salt and drizzle in some of the olive oil – just enough to bind the sauce and get an oozy consistency
Add the pesto to the cooked pasta and help with some of the pasta cooking water if needed
Serve with grated Parmesan
