3 Tasty Meal Inspirations: Meals With Chicken

Getting tired of making the same chicken breast recipes each week? Chicken and rice, chicken and salad, chicken and anything you have in the cupboard? As you may have noticed,  this can get boring pretty quickly. We’re here to teach you how to do more with your chicken – from zesty salsa to spicy yoghurt, get the most of out chicken and wave goodbye to dull, repetitive meals.

1. Chicken Wrapped in Bacon with Mixed Salad


  • 2 x chicken breasts
  • 2 x baking potatoes
  • 2 x cloves of garlic
  • 2 x yellow peppers
  • 6 x tomatoes
  • 1 x red chilli
  • Bag of baby salad leaves
  • 3 x tablespoons of olive oil
  • ½ a lemon
  • 160g slow roasted tomatoes


Cook chicken breasts as instructed on the packaging. Cut the potatoes into cubes and place in a baking tray with the olive oil and garlic. Season with salt and pepper and cook at 200 degrees Celsius for 35 minutes.

Cut the peppers into chunks, lightly drizzle with olive oil and cook at 180 degrees Celsius for 15 minutes. Cut the tomatoes into quarters, combining with the slow roasted tomatoes, red chilli and roasted peppers. Add salad leaves and season as required.

Serve chicken breasts in pepper sauce with accompanying side salad and potato chunks for your easy chicken breast recipe.

2. Spiced Yoghurt Marinated Grilled Chicken Breast


  • 450g chicken fillets
  • 150ml natural yoghurt
  • 1 x lemon
  • 1 x teaspoon of curry powder
  • 1 x teaspoon of ground coriander
  • 1 x teaspoon of ground cumin
  • 1 x chopped chili and sprig of parsley for garnish
  • 1 x teaspoon cooking oil
  • The Kitchen Green Vegetable Medley


To make the marinade, mix together the natural yoghurt, zest of lemon, curry powder, coriander and cumin in a bowl. Cut open the top of the chicken breast and rub into the marinade – leave to soak for 2 hours.

Cook the chicken breasts in a grill pan for 5 minutes on each side. Cut the lemon in half, brush with oil and grill until coloured. Squeeze lemon juice over the chicken before garnishing with chopped chili and parsley. Serve with The Kitchen Green Vegetable Medley.

3. Honey Chilli Mini Chicken Fillets with Grilled Corn Salsa


  • 760g honey chili mini chicken filets
  • 2 x corn on the cob
  • 1 x dessert spoon of cooking oil
  • 1 x teaspoon of chopped red chili
  • 1 x finely chopped red onion
  • 1 x lemon
  • 2 x sprigs of spring onion
  • 2 x tablespoons of olive oil
  • 1 x teaspoon of castor sugar


Cook the chicken fillets for 18-20 minutes at 200 degrees Celsius.

To create your salsa mixture, place the red chilli, red onion, lemon juice, chopped spring onions, olive oil and castor sugar in a bowl and mix well.

Drizzle the two corn on the cobs with cooking oil – grill until all sides are cooked. Cut the corn, removing the kernels and add to your salsa mixture. Serve as a side with the honey chili mini chicken filets.
