Lauren shares her week of dinners for £35 from SPAR!

Week 3 recipes include:

  • Creamy peri peri chicken wraps
  • Halloumi pesto pasta salad
  • Cheeseburger quesadillas
  • Chicken nacho flatbreads
  • Pepperoni pizza puffs

£35 got all the ingredients for 5 dinners and plenty of leftovers for lunches.

Each recipe serves 4. *The shop doesn't include cupboard staples such as oil, spices and flour

Pepperoni pizza puffs

You will need:

  • One roll of ready to use puff pastry
  • Packet of spar pepperoni
  • 70g Red Leicester grated
  • Passata seasoned with mixed herbs
  • Salt and pepper 

Method:

  • Cut your pastry into 6 pieces
  • On one half of your pastry add your passata, two pieces of pepperoni and aprox 10g cheese. Fold pastry over diagonally.
  • Milk wash each pastry and oven cook for 12-15 mins until golden and crispy.
  • Serve with garlic mayo and salad 

Creamy Peri Peri Wraps

You will need:

  • 250g chicken cut into strips
  • Half red pepper
  • Half green pepper
  • 4 Wraps
  • 45g Philadelphia
  • 40ml Nandos medium peri peri sauce 

Method:

  • Cook your chicken in the pan, season well with salt and pepper.
  • Chop your peppers into pieces and add into a bowl. Add in the cooked chicken along with the Philadelphia and peri peri sauce. Mix well.
  • Fill each wrap with your mixture and fold your wraps up. Fry the wraps on each side until golden and crispy. 
Halloumi pesto pasta salad 

You will need:

  • one packet of halloumi
  • 250g dry pasta (I used the macaroni which was on offer for 69p - smaller pasta works better)
  • one courgette cut into pieces
  • half a punnet of baby tomatoes cut into pieces
  • two tablespoons green pesto 

Method:

  • cook pasta as per packet instructions. Whilst cooking cut your veg and halloumi. When pasta is ready, drain and set to the side. Spray with some oil to stop it from sticking.
  • pan fry your halloumi slices on each side until golden brown and set to sit.
  • in a bowl add your pasta, courgette, tomato, pesto and salt and pepper. Combine well.
  • top salad with your halloumi and serve.

Cheeseburger quesadillas

You will need

  • 3 wraps
  • 500g mince
  • 75g spar Red Leicester cheese grated
  • tomatoes chopped
  • burger sauce
  • ketchup 

Method:

  • In a pan fry off your mince until brown. When nearly finished add in a tablespoon of ketchup. Set to the side.
  • take a wrap and add to the pan, on one side add some mince mixture, cheese, tomatoes, gherkins and burger sauce. Fold wrap over and cook on each side until crispy. Cut each quesadilla into 3 pieces.
  • serve with burger sauce to dip quesadillas into.
Chicken Nacho Flatbreads

You will need:

  • 250g chicken breast cut into pieces
  • flatbreads or naans
  • salsa
  • lettuce
  • tortilla chips
  • yoghurt
  • avocado / guacamole
  • pepper  

Method:

  • Season your chicken with fajita seasoning and cook in oven until cooked through.
  • heat your flatbreads or naans.
  • top your bread with salsa, chicken, lettuce, chopped pepper, avocado or guac and some yoghurt mixed with garlic and herbs. Sprinkle on some crushed tortillas to finish.
