Lauren shares her week of dinners for £35 from SPAR!

This weeks recipes include:

  • Cashew nut curry 
  • Pulled chicken enchiladas 
  • Chill dogs with fried onions and wedges 
  • Spicy meatballs with flatbreads and yoghurt dip
  • Chilli loaded wedges

£35 got all the ingredients for 5 dinners and plenty of leftovers for lunches.

Each recipe serves 4. *The shop doesn't include cupboard staples such as oil, spices and flour

Cashew Nut Curry

You will need:

  • One onion
  • Garlic 
  • Two tablespoons curry powder or paste
  • Cucumber 
  • One pepper 
  • Tin chopped tomatoes 
  • Half tin coconut milk 
  • 25g cashews 
  • 50g flour 
  • 50g yoghurt 

Method:

  • Sauté your onion and garlic until soft. Add in curry powder and cook for 2 minutes. Add in your cucumber and pepper.
  • Blend together chopped tomato and cashews and add into pot with coconut milk. Cook for 10 mins. Add extra curry to taste if required.
  • For naans, mix together flour and yoghurt until forms a dough. Roll out into naan shapes and pan fry. 
  • Top your curry with extra cashews and serve with naan and rice.

This makes 4 large portions. You could add chicken, halloumi or paneer to this curry also!

Pulled Chicken Enchiladas

You will need:

  • One chicken ( I got a @spar_ni reduced one)
  • Tortilla wraps (I used 3 but use 1 per person)
  • One pepper and one onion 
  • Fajita seasoning
  • Garlic 
  • Chopped tomatoes 
  • Passata
  • Cheese 
  • Sour cream 

Method:

  • Cook your chicken and shred once cooked.
  • Add your chopped pepper, onion and a teaspoon garlic to a pan and sauté. Add in half a tin chopped tomatoes and two tablespoons fajita seasoning. Reduce on medium heat for 5-6 mins.
  • Add in your shredded chicken and cook for a further few mins.
  • Fill your tortilla wraps with the chicken mix and fold up. Add to an oven proof dish and top each wrap with passata and cheese. Bake in oven for 12 mins at 180.
  • Remove from oven and top with some sour cream
Chill Dogs With Fried Onions And Wedges

You will need:

  • 4 spar pork sausages
  • 4 brioche hot dog baps 
  • Chilli con carne (see recipe below)
  • Grated cheese 
  • One onion cut into thin slices 
  • Potatoes 

For your Chilli 

  • 1 pack of mince 
  • Garlic 
  • One onion finely chopped 
  • Chilli con carne seasoning 
  • Tin of chopped tomatoes 
  • Passata 

Method:

  • Brown your mince in a pan. Add your garlic and onion and cook off.
  • Add in your chilli con carne seasoning ( I used two large tablespoons ) and your chopped tomatoes and 100ml passata.
  • Reduce over a medium heat for 15 minutes.

 

(You can add kidney beans to chilli if you like)

Spicy Meatballs With Flatbreads & Yoghurt Dip

You will need

  • 1 pack spar mince 
  • One onion finely chopped 
  • Half tin chopped tomatoes 
  • 100ml passata
  • Chilli flakes, salt, pepper, mixed herbs 
  • 100g fat free yoghurt
  • 100g flour 
  • Half a cucumber 

 

Method:

  • Add your onion to mince and season with salt, pepper, teaspoon chilli flakes and teaspoon mixed herbs. Roll into meatballs.
  • Brown meatballs in pan and then add in your chopped tomatoes, passata and season with another teaspoon chilli flakes, herbs and salt and pepper to taste. Heat over medium heat for 12-15 mins until sauce is reduced 
  • Whilst sauce is cooking, combing 100g flour and 100g yoghurt to make a dough. Flour a surface, roll out dough and Divide into 4 flatbreads. Pan fry each flat bread for 2-3 mins on each side.
  • For your dip, finely grate cucumber and add to 50g yoghurt. 
  • Serve your meatballs with flatbreads, salad and dip.
Chilli Loaded Wedges

You will need:

  • 1 pack of mince 
  • Garlic 
  • 1 onion finely chopped 
  • Chilli con carne seasoning 
  • Tin of chopped tomatoes 
  • Passata
  • 4 medium potatoes

Method:

  • Brown your mince in a pan. Add your garlic and onion and cook off.
  • Add in your chilli con carne seasoning ( i used two large tablespoons ) and your chopped tomatoes and 100ml passata.
  • Reduce over a medium heat for 15 minutes.

Wedges 

  • Cut 4 medium potatoes in wedge shapes 
  • Par boil for 5 mins 
  • Drain, season and air fryer or oven bake for 20 mins.
  • In an oven dish add your wedges, top with chilli and top with grated cheese. Oven bake for 10 mins until cheese is cooked on top.
