Lauren shares her week of dinners for £35 from SPAR!

This weeks recipes include:

£35 got all the ingredients for 5 dinners and plenty of leftovers for lunches.

Each recipe serves 4. *The shop doesn't include cupboard staples such as oil, spices and flour

Slow cooker pepper chicken and mash

You will need

- 3 chicken breasts cut into chunks

- 1 onion chopped

- handful mushrooms chopped

- 1 sachet pepper sauce

- 400ml chicken stock

- two teaspoons’ garlic

- salt and pepper

 

Method:

 

  • In a slow cooker add your chicken breast chunks, onion, mushroom, stock, garlic, salt and pepper and pepper sauce. Mix well and cook on high for 4 hours or low for 6.
  • Serve with mash and green veg.

Creamy chicken pie

You will need:

    • 1 roll of puff pastry
    • 1 whole chicken
    • 350ml chicken stock
    • 100ml single cream
    • 3 tablespoons flour
    • 1 onion
    • 2 carrots
    • Handful mushrooms
    • Salt and pepper
    • 2 teaspoons garlic

Method:

  • Cook your seasoned chicken. I air fried mine for 50 mins.
  • In a pan sauté your finely chopped carrot, onion and mushroom with the garlic until soft. Season with salt and pepper.
  • Add in your flour and mix well.
  • Slowly add in your chicken stock, stirring well. Cook over medium heat for a few mins until the stock starts to thicken. Add in your cream at this stage.
  • Remove all the meat from your chicken and add this into the pan and mix well.
  • Grease an oven proof dish with butter and add in half your pastry for your base. Add in the filling and cover with the other half of the pastry for your lid.
  • Egg wash your pie and bake for 20 mins in the oven at 180 until pastry is golden and crispy.
  • Serve with mash and veg.
Pizza Pasta bake

You will need:

  • 12 slices of pepperoni
  • 250ml passata
  • Handful of tomatoes
  • 1 onion
  • 1 pepper
  • 2 teaspoons garlic
  • Tablespoon basil
  • Tablespoon mixed herbs
  • Teaspoon chilli flakes
  • 250g penne pasta
  • 100g mozzarella
  • Salt and pepper

Method:

  • Cook your pasta as per packet instructions. Drain and keep 100ml of pasta water.
  • In a pan cook off your onion, garlic and peppers until soft. Add in 6 slices of pepperoni sliced up and your herbs. Mix well and then add in your passata, tomatoes and pasta water and cook for a further 5 minutes.
  • Add your drained pasta into the sauce and mix it well.
  • In an oven proof dish add your pasta mix, top with mozzarella and the remaining 6 pepperoni slices and bake in oven at 180 for 12-15 mins until cheese is golden and bubbling.
  • Top with some basil.

 

Hot Honey Halloumi pasta

You will need

  • One block of halloumi cut into cubes
  • 40g runny honey
  • 2 tablespoons hot sauce
  • 250g dry pasta
  • 1 onion
  • 1 pepper
  • 2 teaspoon garlic.
  • 100ml single cream
  • 200ml passata
  • 20g mozzarella
  • Salt and pepper
  • Teaspoon chilli flakes
  • Tablespoon paprika

 

Method:

  • Cook your pasta as per packet instructions. Reserve some of the pasta water.
  • In a pan, fry off your halloumi cubes. When cooked, mix together your honey and halloumi and pour half the sauce over the crispy halloumi pieces. Set to the side.
  • In a pan cook off your onion, pepper and garlic. Add in your passata, some pasta water and seasoning and mix well. Add in your cream and mix this through.
  • When sauce is ready, add in your drained pasta and combine well. Add in your mozzarella and the rest of the hot honey sauce.
  • Top with the crispy halloumi and serve.
Mexican one pot beef and rice

You will need:

    • 1 onion
    • 2 teaspoon garlic
    • 400g lean mince meat
    • 1 pepper
    • Handful mushrooms
    • 2 tablespoons tomato puree
    • Seasoning – tablespoon paprika, tablespoon cumin, teaspoon oregano and teaspoon chilli.
    • 200g easy cook rice (uncooked)
    • 200ml passata
    • Handful chopped tomatoes
    • Tin of drained sweetcorn
    • Beef stock
    • Salt and pepper
    • Sour cream
    • Tortilla chips

Method:

  • In a pot cook of your onion, garlic and mince until brown.
  • When browned add in your seasoning, peppers and mushrooms and combine well.
  • Add in your tomato puree and mix this through. Then add in your passata, tomatoes and stock and mix.
  • Add in your uncooked rice and the sweetcorn, mix this through and then cover with a lid.
  • Cook for 15 mins on low heat until rice is cooked fully.
  • Serve with sour cream, fresh tomatoes and tortilla chips.
