Breakfast Quesadilla

What you'll need
• 2 x eggs
• 1 x tin of kidney beans
• 1 x tin of chopped tomatoes
• 1 tsp paprika
• 1 tsp chilli powder
• 1 tsp hot sauce
• 2tsp oil
• 1 x red onion, diced
• 100g cheese, grated
• 1 x tortilla
Method
• Heat the oil in a pan on medium heat
• Add the onion and cook until soft for 10 minutes
• Add the beans and cook for 2 minutes
• Add the tin of chopped tomatoes, paprika, chilli powder + hot sauce and simmer on a low heat for 20 minutes
• In a separate pan scramble the eggs and cook on a low heat for 5 minutes
• Add the tortilla to a hot dry pan, spoon the bean mixture on top, top with eggs and cook on each side for 1 to 2 minutes
