What you'll need:
For the skewers:Â
- 4 chicken fillets, trimmed and cut into large chunksÂ
- 100g natural yogurtÂ
- 2 tbsp curry powderÂ
- Juice of 1 lemonÂ
- 4 wooden skewers, pre-soaked in cold waterÂ

For the Raita:Â
- 250g natural yogurtÂ
- 20g chopped fresh mintÂ
- Juice and grated zest of 1 lemonÂ
- 1 clove garlic, crushed Â
- 1 tbsp mayonnaise Â
Method:
- For the raita, simply pop all ingredients in a bowl and mix. Raita is delicious as an accompaniment to spicy grilled food, or as a snack with carrot/cucumber sticks
- In a bowl, place chicken chunks, yogurt, curry powder, lemon juice, salt, pepper and mix well. Cover with cling film and place into a refrigerator to marinate for at least 30 minutesÂ
- Thread the chicken onto wooden skewers and barbeque for 10 - 15 minutes over a moderate - high heat, turning occasionally until thoroughly cookedÂ
