
• 2 x eggs
• 1 x tomato
• 1 x onion
• 2 tsp olive oil
• Anything leftover e.g. chicken, potatoes, peppers
• Season the eggs with salt and pepper. Heat the oil in a non stick frying pan over a medium to low heat for one minute
• Pour the eggs into the pan making sure as much of the pan is covered. Let the egg mix cook for approximately 1 minute or until the eggs start to set
• Scatter the onion, tomato and a handful of anything extra you have and fold the omelette in half. Leave to cook for 1 minute 30 seconds before flipping over and cooking for a further 1 minute and 30 seconds
• Slide onto a plate and serve
