Heat oven to 180C/160C fan/gas 4. Grease a baking dish with butter. Lay the peach slices in to the base of the dish, sprinkling with 2 tbsp of sugar, ground ginger and set aside.
In a food processor combine the flour, sugar, baking powder, cinnamon and salt. Then add the cubed butter and pulse until the mixture resembles breadcrumbs. Add the egg and continue to pulse creating a thick dough.
Spoon the dough mix on top of the peaches, leaving some gaps for the dough to bake into. Sprinkle with caster sugar before baking for 40 minutes or until golden.
Enjoy with vanilla ice cream.
