Savoury Stuffed Peppers

What you'll need
- 1 packet of PAXO sage and onion stuffing mix, made up as directed on the pack
- 4 The Greengrocer’s mixed peppers, cut in half and deseeded
- 2 The Greengrocer’s tomatoes, diced
- 6 The Greengrocer’s mushrooms, sliced
- 4 tbsp SPAR enjoy local medium cheddar cheese, grated
Method
- Preheat the oven to 190C
- In a mixing bowl combine the Paxo sage and onion stuffing mix, tomatoes, mushrooms and cheese, saving a little to sprinkle on top before they go into the oven
- Divide the mixture between the peppers, top with leftover cheese, then transfer to an ovenproof dish and bake for 30-35 minutes until the peppers are cooked and the topping is crisp and golden
