What you'll need:

  • 1 ripe avocado 
  • 2 slices sourdough bread 
  • 2 eggs (poached or fried) 
  • 1 tbsp lemon juice 
  • Salt, pepper, and chilli flakes 
  • Optional: feta or cherry tomatoes 

Method:

  1. Toast bread. 
  2. Mash avocado with lemon juice, salt, and pepper. 
  3. Spread avocado on toast and top with eggs. 
  4. Sprinkle chilli flakes and add feta or tomatoes if desired.Â
