Perfect for Mother’s Day Breakfast!

What you'll need:

1 sheet Puff Pastry Dough

5 Eggs (Reserve one for egg wash)

60g Cheddar Cheese (shredded)

8 Bacon rashers (cooked until crisp)

4 Sausages (fully cooked)

10 Fresh Chives (Chopped)

Salt & pepper to taste

Method:

  1. Preheat oven to 200°c and line baking sheet with parchment paper.
  2. Place dough on baking sheet and cut into 4 even squares. Fold edges of dough inward to create a crust.
  3. Crack eggs onto dough and sprinkle with cheese. Place chopped bacon and sausage on top and season all over with salt and pepper.
  4. Beat one egg to brush over the pastry before baking.
  5. Carefully transfer baking sheet to oven and bake until crust is golden and egg whites are set, 10 to 15 minutes.
  6. Garnish with chives. Slice into squares and serve warm.
