Butter Roast Turkey

What you'll need:
- 1 x Boneless turkey crown. (Approx. 5kg)Â Â
- 200g softened butter Â
- Salt and pepper Â
Method:
- Carefully separate the 2 turkey breasts with a knife. Â
- With your hands rub both turkey breasts with a good amount of salt and pepper, then rub all over with the softened butter.
- Roll each breast in clingfilm and then wrap in a layer of tin foil. The cling film ensures the moisture stays in the joint.Â
- Roast at 180°C for 1hr 10 min. Â
- Once cooked, remove from oven and let it rest in the foil for at least 20 min before carving to serve. Â
