Chicken Potato Casserole

With tender layers of chicken, potatoes, and onions, all smothered in a creamy sauce and topped with melted cheese, this dish is a satisfying meal that’s easy to prepare yet impressively delicious.

What you'll need:

  •  450g chicken breast or thighs, chopped
  • 4-5 medium potatoes, peeled and thinly sliced
  • 1 medium onion, sliced
  • 250g grated cheese
  • 250ml single cream
  • 250ml chicken stock
  • 2 tbsp flour
  • 2 tbsp butter
  • 1 tsp garlic granules
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs (parsley or thyme) for garnish, optional

Method:

  1. Preheat your oven 190°C. Lightly grease a large baking dish.
  2. Prepare the Sauce:
    • In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a paste.
    • Gradually whisk in the cream and chicken stock. Add garlic powder, paprika, salt, and pepper to taste.
    • Continue stirring for 5-7 minutes until it thickens & then remove from heat.
  3. Layer the Casserole:
    • Arrange a layer of sliced potatoes on the bottom of the baking dish. Sprinkle with a little salt and pepper.
    • Add half of the sliced onions, then layer half of the diced chicken on top.
    • Pour half of the sauce over the chicken and sprinkle with half of the cheese.
    • Repeat with the remaining potatoes, onions, chicken, and sauce.
  4. Top with cheese, cover the dish with foil and bake in the oven for 45 minutes
  5. Remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden and the potatoes are soft.
  6. Remove from the oven, let it sit for a few minutes, and garnish with fresh herbs if desired.
