Chicken Potato Casserole
Warm, hearty, and full of comforting flavours, this Chicken Potato Casserole is the ultimate crowd-pleaser for family dinners. With tender layers of chicken, potatoes, and onions, all smothered in a creamy sauce and topped with melted cheese, this dish is a satisfying meal that’s easy to prepare yet impressively delicious.
What you'll need:
- 450g chicken breast or thighs, chopped
- 4-5 medium potatoes, peeled and thinly sliced
- 1 medium onion, sliced
- 250g grated cheese
- 250ml single cream
- 250ml chicken stock
- 2 tbsp flour
- 2 tbsp butter
- 1 tsp garlic granules
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) for garnish, optional
Method:
- Preheat your oven 190°C. Lightly grease a large baking dish.
- Prepare the Sauce:
- In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a paste.
- Gradually whisk in the cream and chicken stock. Add garlic powder, paprika, salt, and pepper to taste.
- Continue stirring for 5-7 minutes until it thickens & then remove from heat.
- Layer the Casserole:
- Arrange a layer of sliced potatoes on the bottom of the baking dish. Sprinkle with a little salt and pepper.
- Add half of the sliced onions, then layer half of the diced chicken on top.
- Pour half of the sauce over the chicken and sprinkle with half of the cheese.
- Repeat with the remaining potatoes, onions, chicken, and sauce.
- Top with cheese, cover the dish with foil and bake in the oven for 45 minutes
- Remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden and the potatoes are soft.
- Remove from the oven, let it sit for a few minutes, and garnish with fresh herbs if desired.
