What you'll need:

For the skewers: 

  • 4 chicken fillets, trimmed and cut into large chunks 
  • 100g natural yogurt 
  • 2 tbsp curry powder 
  • Juice of 1 lemon 
  • 4 wooden skewers, pre-soaked in cold water 


For the Raita: 

  • 250g natural yogurt 
  • 20g chopped fresh mint 
  • Juice and grated zest of 1 lemon 
  • 1 clove garlic, crushed  
  • 1 tbsp mayonnaise  


  • For the raita, simply pop all ingredients in a bowl and mix. Raita is delicious as an accompaniment to spicy grilled food, or as a snack with carrot/cucumber sticks
  • In a bowl, place chicken chunks, yogurt, curry powder, lemon juice, salt, pepper and mix well. Cover with cling film and place into a refrigerator to marinate for at least 30 minutes 
  • Thread the chicken onto wooden skewers and barbeque for 10 - 15 minutes over a moderate - high heat, turning occasionally until thoroughly cooked
