What you'll need:

  • 1 packet of ready cooked chicken, chopped
  • 3 eggs, beaten with some seasoning
  • 1 red pepper, de-seeded and chopped into small chunks
  • 1 pack SPAR Frozen Mixed Veg
  • 600g cooked / microwave rice
  • 2 tbsp curry powder
  • 2 tbsp soy sauce (plus extra for serving)

Method:

  • Heat a splash of oil in a large frying pan and add in the beaten eggs.
  • Swirl the pan to coat in a thin layer of egg and cook for a few mins until set.
  • Remove from pan onto  a chopping board, roll up, slice thinly and set aside.
  • Heat a little more oil, then add the frozen veg, chopped pepper and curry powder with a splash of water.
  • Cook for 1-2 mins until the veg starts to soften.
  • Add the rice, chicken, egg and soy sauce. Toss together and heat through until hot.
  • Serve with more soy sauce & enjoy!
