In Season Chilli & Sea Salt Wedges with Rooster Potatoes

What you'll need:

Ingredients​

  • 6 The Greengrocer’s Rooster Potatoes ​
  • Oil for frying​
  • 2 Cloves garlic peeled​
  • 2 tablespoons olive oil ​
  • 1 teaspoon chilli flakes  ​
  • 1 teaspoon sea salt ​
  • 12 The Greengrocer’s basil leaves 

Method:

Method​

  1. Preheat the oven to 200°C (400°F, Gas Mk 6)​
  2. Scrub the potatoes and cut into 8 even-shaped wedges. ​
  3. Cover with the minimum amount of water and bring to the boil. ​
  4. Simmer gently for approximately 10 minutes. Drain and let off  steam.​
  5. Place on a lightly oiled baking tray, brush with olive oil and bake for 15 to 20 minutes or until crispy.​
  6. Alternatively go for the more indulgent option and deep fry until golden and crispy.​

Chilli & sea salt dressing:​

  1. Mash the garlic, basil, oil, salt and chilli in a blender or mortar and pestle until smooth.​
  2. Drizzle with the dressing.​
