In Season Chilli & Sea Salt Wedges with Rooster Potatoes

What you'll need:


  • 6 The Greengrocer’s Rooster Potatoes 
  • Oil for frying
  • 2 Cloves garlic peeled
  • 2 tablespoons olive oil 
  • 1 teaspoon chilli flakes  
  • 1 teaspoon sea salt 
  • 12 The Greengrocer’s basil leaves 



  1. Preheat the oven to 200°C (400°F, Gas Mk 6)
  2. Scrub the potatoes and cut into 8 even-shaped wedges. 
  3. Cover with the minimum amount of water and bring to the boil. 
  4. Simmer gently for approximately 10 minutes. Drain and let off  steam.
  5. Place on a lightly oiled baking tray, brush with olive oil and bake for 15 to 20 minutes or until crispy.
  6. Alternatively go for the more indulgent option and deep fry until golden and crispy.

Chilli & sea salt dressing:

  1. Mash the garlic, basil, oil, salt and chilli in a blender or mortar and pestle until smooth.
  2. Drizzle with the dressing.
