Lunch Chipotle Burrito Bowl

Spice up your spring salad with a Mexican twist, bringing the flavour of the burrito bar from home!

What you'll need:

  • 400g Chicken Breast
  • 200g Spicy Microwave Rice
  • Lettuce (Shredded)
  • 410g Black Beans (washed & microwaved)
  • 6 Tomatoes (Diced)
  • 1 Red Onion (Diced)
  • 410g Sweetcorn
  • 200g Sour Cream
  • 100g Guacamole
  • Cheese (Grated)

Method:

  1. Marinade your chicken breast in seasonings of choice. Air fry for 20 minutes, turning half way.
  2. Whilst the chicken is cooking, prep your sides, wash the beans thoroughly and warm in the microwave for 3 minutes. Cook the spicy rice in the microwave for 1 minute.
  3. When the chicken is fully cooked, remove from air fryer and cut into thin strips.
  4. Lay out 4 containers and begin adding a base of rice, lettuce, chicken & beans and then garnishing with the tomato, onion, sweetcorn, sour cream, guacamole and grated cheese.
  5. The bowls are ready to eat now or store in the fridge for lunches and dinners for the week!
