A vibrant stir-fry with chicken, stir-fry vegetables, and a citrus-based sauce that adds a tangy sweetness, perfect when paired with jasmine rice.
What you'll need:
- 2 chicken breasts, sliced
- 2 soft citrus fruits, juiced
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp rice vinegar
- 1 clove garlic, minced
- 1 tsp fresh ginger, grated
- Stir-fry vegetables (peppers, broccoli, carrots)
- Olive oil for cooking
Method:
- Mix citrus juice, soy sauce, honey, and vinegar – set aside.
- Heat oil in a pan, cook chicken until golden.
- Add garlic, ginger, and vegetables – stir-fry for 5–6 minutes.
- Pour in glaze and cook until sauce thickens.
- Serve hot with jasmine rice.
