A classic tuna and egg salad combining rich, savoury flavours with a creamy texture—simple, satisfying, and perfect for a quick lunch or light meal.

What you'll need:

• 2 tins SPAR tuna chunks (spring water or brine), drained
• 2 pack The Greengrocer’s Little Gem lettuces, chopped
• 150g The Greengrocer’s cherry tomatoes, halved
• ½ The Greengrocer’s cucumber, diced
• ½ The Greengrocer’s red onion, finely sliced
• 2–3 SPAR eggs
• 2–3 tbsp SPAR mayonnaise
• 1 tsp The Greengrocer’s lemon juice (optional but recommended)
• Salt & black pepper
• Optional: Baby potatoes and fine green beans for extra crunch

Method:

Place eggs in a saucepan with cold water and bring to a boil, then simmer for 8–9 minutes. Cool under cold water, peel, and slice.
Chop the Little Gem, halve the cherry tomatoes, dice the cucumber and add everything to a large bowl. (Add baby potatoes or fine green beans if using at this step)
Flake the drained tuna with a fork, mix with mayonnaise and lemon juice, season with salt and pepper.
Add the tuna mixture to the salad bowl, gently toss everything together and top with sliced eggs.
