Rich and creamy Cajun chicken pasta bursting with bold, smoky flavours—an easy, satisfying dish perfect for a quick and comforting meal.
What you'll need:
• 2 SPAR crispy chicken fillets, sliced into strips
• 300g SPAR penne pasta
• 1 The Greengrocer’s red onion, thinly sliced
• 2 The Greengrocer’s cloves garlic, minced
• 1–2 tbsp Cajun seasoning
• 1 tbsp olive oil
• 200ml SPAR double cream
• 50g SPAR cheddar, grated
• 40g Parmigiano Reggiano
• Salt & black pepper
Method:
• Boil pasta in salted water until al dente. Reserve ½ cup of pasta water before draining.
• Place chicken in airfryer as per pack instructions. Cook chicken as per instructions. Remove and set aside.
• In a pan heat oil and add sliced red onion with Cajun seasoning. Cook 2–3 minutes until softened.
• Add garlic and cook for 30 seconds. Pour in cream and bring to a gentle simmer. Stir in grated cheese and Parmigiano Reggiano until melted and smooth.
• Add drained pasta and toss to coat in the sauce. Simmer together for 1–2 minutes until everything is creamy and coated.
• Plate the pasta, slice the chicken and place on top of pasta. Finish with parsley garnish
