A comforting pasta dish featuring tender spinach, rich cream, garlic, and Parmesan. Quick to make in under 30 minutes and easily customizable with add-ins like chicken or mushrooms.

What you'll need:
- 250g pasta (penne, spaghetti or fusilli work great)Â
- 1 tbsp olive oilÂ
- 2 garlic cloves, mincedÂ
- 150g fresh spinachÂ
- 200ml double cream (or crème fraîche for a lighter version)Â
- 50g grated Parmesan (plus extra for serving)Â
- Salt & pepper to tasteÂ
- Pinch of nutmeg (optional)Â
- Lemon zest or a squeeze of lemon juice (optional for brightness)
Optional Add-ins:Â
- Grilled chicken or salmonÂ
- Mushrooms or sun-dried tomatoesÂ
- Toasted pine nuts for crunchÂ
Method:
- Cook pasta according to packet instructions. Reserve ½ cup of the pasta water before draining.Â
- In a large pan, heat olive oil over medium heat. Add garlic and cook for 1–2 minutes until fragrant.Â
- Add fresh spinach and sauté until wilted.Â
- Stir in the cream and bring to a gentle simmer. Add grated Parmesan and stir until melted and smooth.Â
- Season with salt, pepper, and a pinch of nutmeg if using.Â
- Add the cooked pasta to the sauce. If needed, use a little pasta water to loosen the sauce.Â
- Finish with a touch of lemon zest or juice for freshness.Â
