Creamy Spinach and Garlic Pasta

A comforting pasta dish featuring tender spinach, rich cream, garlic, and Parmesan. Quick to make in under 30 minutes and easily customizable with add-ins like chicken or mushrooms.

What you'll need:

  • 250g pasta (penne, spaghetti or fusilli work great) 
  • 1 tbsp olive oil 
  • 2 garlic cloves, minced 
  • 150g fresh spinach 
  • 200ml double cream (or crème fraîche for a lighter version) 
  • 50g grated Parmesan (plus extra for serving) 
  • Salt & pepper to taste 
  • Pinch of nutmeg (optional) 
  • Lemon zest or a squeeze of lemon juice (optional for brightness)

Optional Add-ins: 

  • Grilled chicken or salmon 
  • Mushrooms or sun-dried tomatoes 
  • Toasted pine nuts for crunch 

Method:

  1. Cook pasta according to packet instructions. Reserve ½ cup of the pasta water before draining. 
  2. In a large pan, heat olive oil over medium heat. Add garlic and cook for 1–2 minutes until fragrant. 
  3. Add fresh spinach and sauté until wilted. 
  4. Stir in the cream and bring to a gentle simmer. Add grated Parmesan and stir until melted and smooth. 
  5. Season with salt, pepper, and a pinch of nutmeg if using. 
  6. Add the cooked pasta to the sauce. If needed, use a little pasta water to loosen the sauce. 
  7. Finish with a touch of lemon zest or juice for freshness.Â
