What you'll need:

  • 2 crisp red apples, julienned or thinly sliced 
  • ½ red cabbage, finely shredded 
  • 1 carrot, grated 
  • 40g walnuts, chopped 
  • Handful fresh parsley, chopped 
  • 3 tbsp Greek yogurt 
  • 1 tbsp mayonnaise 
  • 1 tsp Dijon mustard 
  • Squeeze of lemon juice 
  • Salt & pepper to taste 

Method:

  1. In a large bowl, toss apples, cabbage, carrot, walnuts, and parsley. 
  2. In a small bowl, mix yogurt, mayo, mustard, lemon juice, salt, and pepper. 
  3. Combine with the slaw, toss to coat, and chill before serving.
