Perfect for the BBQ
Cool down with this zesty cucumber, mint & feta salad! It’s crisp, creamy, and herby—ready in 15 mins and perfect for hot days or pairing with grilled dishes.

What you'll need:
- 1 large cucumber, thinly sliced (or use a veg peeler for ribbons)
- 100g feta cheese, crumbled
- A handful of fresh mint leaves, chopped
- Juice of ½ lemon
- 1 tbsp olive oil
- Salt & pepper to taste
- Optional: sprinkle of chilli flakes or toasted pine nuts for crunch
Method:
- Slice cucumber and place in a bowl. If you prefer a less watery salad, sprinkle cucumber with a little salt and let it sit for 10 mins, then drain excess liquid.
- Add crumbled feta and chopped mint.
- Drizzle over lemon juice and olive oil, season with salt & pepper.
- Toss gently and serve chilled.
