What you'll need:

  • 1 large cucumber, thinly sliced (or use a veg peeler for ribbons) 
  • 100g feta cheese, crumbled 
  • A handful of fresh mint leaves, chopped 
  • Juice of ½ lemon 
  • 1 tbsp olive oil 
  • Salt & pepper to taste 
  • Optional: sprinkle of chilli flakes or toasted pine nuts for crunch 

Method:

  1. Slice cucumber and place in a bowl. If you prefer a less watery salad, sprinkle cucumber with a little salt and let it sit for 10 mins, then drain excess liquid. 
  2. Add crumbled feta and chopped mint. 
  3. Drizzle over lemon juice and olive oil, season with salt & pepper. 
  4. Toss gently and serve chilled.
