Cucumber & Mint Yoghurt Dip

What you'll need:

  • ½ cucumber, grated 
  • 200g Greek yoghurt 
  • 1 tbsp fresh mint, finely chopped 
  • 1 small garlic clove, minced 
  • Juice of ½ lemon 
  • Salt and pepper to taste 

Method:

  1. Grate cucumber and squeeze out excess water. 
  2. Mix with yoghurt, mint, garlic, and lemon juice. 
  3. Season to taste and chill before serving. 
  4. Serve as a dip with grilled meats, pittas or crudités.
