Grilled Nectarine & Feta Salad

Sweet, grilled nectarines combine with tangy feta and crunchy almonds for a flavourful salad. Perfect as a light lunch or side dish with a touch of balsamic glaze.

What you'll need:

  • 2 ripe nectarines, halved and pitted 
  • 100g feta cheese, crumbled 
  • Handful rocket or mixed leaves 
  • 1 tbsp olive oil 
  • Balsamic glaze to drizzle 
  • Toasted almonds 

Method:

  1. Brush nectarine halves with olive oil and grill for 2–3 minutes per side. 
  2. Arrange rocket on a plate, top with grilled nectarines and feta. 
  3. Drizzle with balsamic glaze and sprinkle with almonds. 
  4. Serve as a light lunch or side dish.Â
