The perfect way to get more vegetables into your and your children’s diet, this recipe is jammed packed with so many vegetables and makes such a delicious sauce, extremely versatile and perfect for pairing with mince, meatballs, chicken, pasta and also as a substitute for Tomato sauce for dipping chips / paninis / sausages into.

What you'll need:

  • 1 tablespoon Olive oil
  • 2 The Greengrocers onions, finely chopped
  • 3 cloves of The Greengrocers Garlic, crushed
  • 2 tablespoons of mixed herbs
  • 3 The Greengrocers Celery stalked, trimmed & finely chopped
  • 2 The Greengrocer Leeks, trimmed & finely chopped
  • 2 The Greengrocers Carrots, peeled & finely chopped
  • 3 The Greengrocer Bell peppers, deseeded & finely chopped
  • 2 The greengrocer Courgettes, peeled & finely chopped
  • 4 tins of SPAR chopped tomatoes or equivalent weight of fresh tomatoes  
  • 1 tablespoon of tomato puree
  • 500ml of chicken or vegetable stock

Not required but additional veg that can be added as well that will not affect the taste

  • 1x Aubergine
  • 1-2 Beetroot
  • 2x  The greengrocer Parsnips -peeled and finely chopped
  • Handful of fresh or frozen Spinach

Required utensils

  • Stock pot minimum volume to be 4.6L
  • Hand blender

Method:

  1. Heat olive oil in a large stock pot over a medium heat, add the chopped onion, garlic & mixed herbs to the pot and stir together for a few minutes.
  2. Add the chopped Celery, Leeks, Carrots, Peppers & Courgettes and cook with the lid on for approximately 20 minutes, check and stir the mixture throughout
  3. Add the tinned tomatoes, tomato puree and stock, stir until combined. Bring to the boil and then reduce the heat to allow the ingredients to simmer for a further 20 minutes and then turn off the heat. Allow contents to cool slightly for 10-15 mins to avoid any burns in the next step.
  4. Blend the mixture until smooth, you may prefer to blend the mixture in smaller batched and them combine the blended mixture again at the end.
  5. Once fully blended, allow the mixture to fully cool before dividing into smaller containers for freezing.

Note – this recipe will create a lot of sauce – approx. 2.6kg
