Juicy homemade chicken flatbreads served with a creamy yogurt dressing, packed with fresh flavours and perfect for a quick, delicious meal any day of the week.

What you'll need:

• 250g SPAR self-raising flour
• 250g SPAR Greek-style yogurt
• 2 SPAR chicken breasts
• 1 tbsp olive oil
• 1 tsp paprika
• 1 tsp garlic powder
• ½ tsp dried oregano
• Juice of ½ The Greengrocer’s lemon
• 1 The Greengrocer’s Iceberg Lettuce
• 4-5 The Greengrocer’s cherry tomatoes, diced
• ¼ The Greengrocer’s cucumber, diced
• 150g SPAR Greek-style yogurt (leftover from flatbreads)
• ¼ The Greengrocer’s cucumber, finely grated
• 1 The Greengrocer’s small garlic clove, minced (optional)
• Salt & pepper

Method:

• Mix flour and yogurt in a bowl. Bring together into a soft dough.
• Knead lightly for 2–3 minutes until smooth (add a little flour if sticky).
• Divide into 4 equal balls. Roll each into a thin circle (about ½ cm thick).
o Heat a dry frying pan over medium-high. Cook each flatbread for 1–2 minutes per side until puffed and golden.
• Slice chicken into strips. Toss with olive oil, spices, lemon juice, salt and pepper.
• Cook in a hot pan for 6–8 minutes until golden and cooked through.
• Rest for a few minutes before serving.
• Squeeze excess water from the grated cucumber using paper towel.
• Mix with yogurt, lemon juice, garlic, salt, pepper, and olive oil.
• Chill until ready to use.
• Spread dressing over the flatbread. Add chicken, lettuce, tomatoes, cucumber, and onion.
