Lemon Butter Baked Cod

A Summer Favourite!

Tender cod fillets baked in a zesty lemon butter sauce with garlic and parsley. A light, flavorful dinner ready in just 20 minutes.

What you'll need:

  • 2 cod fillets (or your favourite white fish) 
  • 2 tbsp butter, melted 
  • Juice of 1 lemon 
  • Zest of ½ lemon 
  • 1 garlic clove, minced 
  • 1 tsp fresh parsley, chopped (or ½ tsp dried) 
  • Salt & pepper to taste 
  • Lemon slices for topping 

Method:

  1. Preheat oven to 200°C (180°C fan). 
  2. Place cod fillets in a lightly oiled or parchment-lined baking dish. 
  3. In a small bowl, mix melted butter, lemon juice, zest, garlic, parsley, salt, and pepper. 
  4. Pour the lemon butter mixture evenly over the cod fillets. 
  5. Top each fillet with a lemon slice or two. 
  6. Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork.Â
