A Summer Favourite!
Tender cod fillets baked in a zesty lemon butter sauce with garlic and parsley. A light, flavorful dinner ready in just 20 minutes.

What you'll need:
- 2 cod fillets (or your favourite white fish)Â
- 2 tbsp butter, meltedÂ
- Juice of 1 lemonÂ
- Zest of ½ lemonÂ
- 1 garlic clove, mincedÂ
- 1 tsp fresh parsley, chopped (or ½ tsp dried)Â
- Salt & pepper to tasteÂ
- Lemon slices for toppingÂ
Method:
- Preheat oven to 200°C (180°C fan).Â
- Place cod fillets in a lightly oiled or parchment-lined baking dish.Â
- In a small bowl, mix melted butter, lemon juice, zest, garlic, parsley, salt, and pepper.Â
- Pour the lemon butter mixture evenly over the cod fillets.Â
- Top each fillet with a lemon slice or two.Â
- Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork.Â
