What you'll need:

  • 2 Little Gem lettuces, leaves separated 
  • 1 cooked chicken breast, shredded 
  • 2 tbsp natural yoghurt 
  • 1 tsp lemon juice 
  • Chopped parsley or dill 
  • Salt & pepper 

Method:

  1. Mix chicken with yoghurt, herbs, lemon juice, and seasoning. 
  2. Spoon into lettuce leaves. 
  3. Serve as a light lunch or starter.Â
