What you'll need:

  • 4 Potatoes (Fresh or Frozen)
  • 300g bacon , diced
  • 150g grated cheese
  • Salt and pepper
  • Sour cream
  • 1 scallion, finely sliced (green party only)


  1. Microwave potatoes until tender and heated through.
  2. Cut the potatoes in half, using a spoon to scoop out the potato, leaving a thin skin.
  3. Grill bacon until desired level of crisp. Crumble the cooked bacon.
  4. Mix the crumpled bacon with the potato filling
  5. Fill the potato skins with bacon and potato filling. Top with cheese.
  6. Bake for 10 minutes or until cheese is melted.
  7. Serve with sour cream, sprinkled with scallions.
