Loaded Sweet Potato

A simple and hearty dish ready in 30 minutes.

Crispy roasted sweet potatoes topped with black beans, melted cheddar, and a dollop of sour cream.

What you'll need:

  • 1 tbsp olive oil 
  • 1 tsp paprika 
  • ½ tsp salt 
  • 1 cup black beans (rinsed) 
  • Sour cream 
  • Grated cheddar 
  • Chopped spring onions 

Method:

  1. Toss sweet potatoes in oil, paprika, and salt. Roast at 200°C for 30 minutes. 
  2. Top with black beans, cheddar, and spring onions. 
  3. Dollop with sour cream and serve hot.Â
