What you'll need:
- 6 large bell peppers (any color), tops cut off and seeds removed
- 1 lb ground beef or ground turkey
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup salsa
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chilli powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1 1/2 cups shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, chopped (optional for garnish)
Method:
- Prepare Peppers: Preheat oven to 375°F (190°C). Arrange bell peppers upright in a baking dish.
- Cook Filling: In a large skillet over medium heat, cook ground beef (or turkey) until browned. Drain excess fat. Add chopped onion and garlic, cooking until softened (about 3-4 minutes).
- Combine Ingredients: Stir in cooked rice, black beans, corn, salsa, chili powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes until well combined and heated through.
- Stuff Peppers: Spoon the filling mixture into each bell pepper, packing it down gently. Top each pepper with shredded cheese.
- Bake: Cover the baking dish with aluminum foil and bake in preheated oven for 30 minutes. Remove foil and bake for an additional 10-15 minutes, until peppers are tender and cheese is bubbly and golden.
- Serve: Garnish with chopped cilantro, if desired.Â
