Try our Mexican Stuffed Peppers—vibrant bell peppers filled with a flavourful mix of seasoned ground beef, rice, and beans. Topped with cheese and baked to perfection, these stuffed peppers make a delicious and hearty meal that's easy to prepare and full of bold flavours. 

What you'll need:

  • 6 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef or ground turkey
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup salsa
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, chopped (optional for garnish)

Method:

  1. Prepare Peppers: Preheat oven to 375°F (190°C). Arrange bell peppers upright in a baking dish.
  2. Cook Filling: In a large skillet over medium heat, cook ground beef (or turkey) until browned. Drain excess fat. Add chopped onion and garlic, cooking until softened (about 3-4 minutes).
  3. Combine Ingredients: Stir in cooked rice, black beans, corn, salsa, chili powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes until well combined and heated through.
  4. Stuff Peppers: Spoon the filling mixture into each bell pepper, packing it down gently. Top each pepper with shredded cheese.
  5. Bake: Cover the baking dish with aluminum foil and bake in preheated oven for 30 minutes. Remove foil and bake for an additional 10-15 minutes, until peppers are tender and cheese is bubbly and golden.
  6. Serve: Garnish with chopped cilantro, if desired.Â
