PIRI – PIRI recipe for 12 chicken thighs

Quick, tasty and full of flavour, this piri-piri chicken thigh recipe combines roasted peppers, chillies, garlic, citrus and coriander for a spicy homemade meal that’s easy to make and perfect for sharing.

What you'll need:

  • 300g The Greengrocer’s Red Peppers 
  • 120g The Greengrocer’s red chilli peppers 
  • 6 The Greengrocer’s cloves garlic peeled 
  • 50g brown sugar 
  • 2 The Greengrocer’s Lemons, squeezed  
  • 2 The Greengrocer’s Limes, squeezed 
  • 100ml vegetable oil 
  • 100ml Extra Virgin olive oil 
  • 30g The Greengrocer’s Fresh Coriander, chopped 
  • 2 tablespoons SPAR Mayonnaise 
  • Salt and pepper, to season

Method:

Roughly chop and deseed the red peppers, chillies, and garlic and lay in a roasting tray, cover with the sugar and oils and roast for 35mins at 180° C. 

Remove the vegetables and put in a blender, add the citrus juice and blend, slowly add the oil from the tray, be careful not to add too much at once or it will split. Season to taste 

Finish with the chopped coriander, if it’s too spicy add some mayonnaise. 

When the chicken thighs are cooked roughly chop them and coat with the dressing.
