Dessert Poached Vanilla and Cinnamon Pears

What you'll need:

  • 8 ripe pears
  • 1 litre water
  • 300g caster sugar
  • 1 cinnamon stick
  • 1 vanilla pod, cut in half and seeds scraped out
  • Juice of 1 lemon

Method:

  1. Place all of the ingredients, except the pears, in a stainless-steel saucepan.
  2. Peel the pears and add them to the saucepan.
  3. Place the saucepan onto the hob and bring to the boil, then reduce to a simmer.
  4. Poach the pears, covered, for 20-30 mins, making sure they are covered in the sugar syrup. The cooking time will depend on the ripeness of your pears – they should be tender all the way through when pierced with a cocktail stick.
  5. Once cooked, remove the pan from the heat and allow the pears to cool in the sugar syrup.
  6. Serve hot or cold with vanilla ice cream or or a dairy free alternative!
