A simple yet flavourful tomato sauce made by roasting plum tomatoes and garlic, then blending with herbs and olive oil. Toss with pasta for a quick, delicious dinner.

What you'll need:
- 500g plum tomatoes, halvedÂ
- 2 garlic clovesÂ
- 2 tbsp olive oilÂ
- 1 tsp dried oreganoÂ
- Salt & pepperÂ
- Pasta of choiceÂ
- Fresh basil & parmesanÂ
Method:
- Roast tomatoes, garlic, olive oil, and herbs at 180°C for 25–30 mins.Â
- Blend into a sauce (optional: leave slightly chunky).Â
- Cook pasta, drain, and toss with sauce.Â
- Garnish with fresh basil and parmesan.Â
