Sage and Apricot Stuffing

What you'll need:
- 200g smoked streaky bacon
- 300g sausage meat
- 300g onion, peeled and diced
- 50g grated garlic
- 150gms butter
- 350g fresh breadcrumbs
- 50g dried apricots
- 20g fresh sage
- Juice of 1 lemon
- Salt and pepper
Method:
- Weigh and lay out all your ingredients, dice the onion and grate the garlic
- In a heavy pan, crispen bacon and cook the sausage meat, (typically takes 10-15 minutes on a medium heat)
- Add the onions and garlic, then cook for a further 5 minutes.
- Continue to stir throughout this whole process to avoid sticking.
- Add the butter and melt through.
- Then add the remaining ingredients (breadcrumbs, dried apricots, fresh sage, and juice of one lemon) and mix thoroughly.
- Season to taste.
- Once cooked, remove from the pan and roll in cling film to let it rest for 10 minutes before serving.
