Sizzling Chicken Fajitas

A Sizzling Summer Favourite!

Sizzle up your dinner with these easy chicken fajitas! Juicy chicken, charred peppers, and onions come together in a flash—just wrap in tortillas, add your toppings, and enjoy!

What you'll need:

  • 500g chicken breast, sliced into strips 
  • 2 tbsp fajita seasoning (or mix of paprika, cumin, garlic powder, and chilli) 
  • 1 red pepper, sliced 
  • 1 yellow pepper, sliced 
  • 1 green pepper, sliced 
  • 1 large red onion, sliced 
  • 1 tbsp olive oil 
  • Juice of 1 lime 
  • Salt and pepper to taste 
  • 8 small flour tortillas 

Optional toppings: sour cream, guacamole, salsa, grated cheese, jalapeños, chopped coriander 

Method:

  1. Marinate the Chicken in a bowl, toss chicken strips with fajita seasoning, lime juice, olive oil, and a pinch of salt and pepper. Set aside for 10 minutes  
  2. Heat a pan or skillet over medium-high heat. Cook chicken for 6–8 minutes until golden and cooked through. Remove and set aside. 
  3. In the same pan, add a little oil if needed. Toss in the sliced peppers and onions. Cook for 5–6 minutes until they’re softened and slightly charred. 
  4. Return chicken to the pan and mix everything together until sizzling hot! 
  5. Load into warm tortillas and top with your favourite extras. Roll up and enjoy!
