Christmas Kitchen Smoked Salmon Wreath

What you'll need:

  • 130g bag mixed green salad leaves
  • 1 small red onion
  • 3 ripe avocados
  • The juice of a lime
  • 1 small bunch of radishes
  • 1 small cucumber
  • 400g sliced smoked salmon
  • 50g pomegranate seeds
  • 250g Feta cheese

For the dressing:

  • 3 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon runny honey
  • 1 teaspoon wholegrain mustard

To serve:

  • Crusty bread

Method:

  1. Peel the red onion, cut in half and finely slice.
  2. Peel the avocados, remove the stone and finely slice. Toss the slices in lime juice. Wash, trim and finely slice the radishes.
  3. Use a potato peeler to cut the cucumber into long fine strips.

For the build

  1. Arrange salad leaves around the edge of a large white plate. Scatter with red onion, avocado and radish slices.
  2. Roll the cucumber and smoked salmon strips into roses and arrange around the wreath.
  3. Sprinkle with pomegranate seeds and crumbled feta cheese.

For the dressing

In a small bowl whisk together the ingredients and drizzle over the salad before serving.
