This quick & easy recipe features SPAR Smokey BBQ Pork Loins, seasoned carrots baked on a cheesy base, and seasoned corn. Cooked to perfection and served with a side of coleslaw, this dish is topped off with a sprinkle of fresh parsley for a burst of colour and flavour, making it a delicious and satisfying meal for two.

What you'll need:

  1. SPAR Smokey BBQ Pork Loins 
  2. 4 Carrots 
  3. 2 Corns on the Cob 
  4. Fresh Parsley 
  5. Parmigiano Cheese 
  6. Salted Butter 
  7. Coleslaw 
  8. Olive Oil Spray 
  9. Salt & Pepper 
  10. Garlic Granules 
  11. Paprika Seasoning 

Method:

  1. Prepare Carrots: Cut the carrots into chunks, ensuring at least one flat side. 
  2. Season Carrots: In a bowl, mix olive oil with paprika, garlic granules, salt, and pepper. Toss the carrot chunks in the mixture until well coated. 
  3. Cheese Base: Layer the bottom of an oven-safe tray with grated or shaved Parmigiano cheese. 
  4. Arrange Carrots: Place the carrot chunks on top of the cheese, flat side down. 
  5. Season Corn: Generously coat the corn on the cob with butter, paprika, and garlic seasoning. 
  6. Wrap Corn: Wrap each seasoned cob in tin foil. 
  7. Bake: Place the prepared carrots and wrapped corn into a preheated oven at 220°C (428°F) and bake for 30 minutes. 
  8. Heat Pan: Spray a frying pan with olive oil and heat it to medium. 
  9. Cook Pork Loins: Once the pan is warm, add the BBQ pork loins. Fry for 3-4 minutes on each side until nicely browned. 
  10. Finish and Serve: Remove the pork loins from the pan. Unwrap the corn and remove the carrots from the oven. Plate the pork loins with the baked carrots and corn, adding a side of coleslaw. Garnish with fresh parsley for a vibrant finish.Â
