Healthy Stuffed Pointed Peppers

This recipe is not only tasty but easy to cook, making it a perfect option for a week day dinner.

What you'll need:

  • drizzle of oil 
  • 1 large The Greengrocer’s onion, chopped 
  • 2 garlic cloves 
  • 500g enjoy local beef mince 
  • 2 x 400g cans chopped tomatoes 
  • 1 tbsp dried oregano 
  • 1 beef stock cube 
  • 2 tbsp tomato ketchup 
  • 4 The Greengrocer’s Sweet Pointed Peppers 
  • 100g enjoy local mature cheddar cheese 


  1. Heat the oil in a large pan. Add the onion and cook for a few mins to soften. Add the garlic and beef and cook until the meat is browned – break it up with a spoon as it cooks.  
  2. Add the tomatoes, oregano, stock cube and ketchup. Season well, stir and cover with a lid. Simmer for 30 mins. 
  3. Half the peppers and scoop out the inside. Place cut-side up in air fryer and season and put on max crisp 200C for 15mins.  
  4. When the mince is cooked, divide it between the softened peppers. Return to the air fryer for 10 mins, sprinkled with cheese.
