These Stuffed Pointed Peppers are a flavorful and hearty dish perfect for any meal. The mixture is then stuffed into sweet pointed peppers, topped with mature cheddar cheese, and baked to perfection. What you'll need:
- drizzle of oilÂ
- 1 large The Greengrocer’s onion, choppedÂ
- 2 garlic clovesÂ
- 500g enjoy local beef minceÂ
- 2 x 400g cans chopped tomatoesÂ
- 1 tbsp dried oreganoÂ
- 1 beef stock cubeÂ
- 2 tbsp tomato ketchupÂ
- 4 The Greengrocer’s Sweet Pointed PeppersÂ
- 100g enjoy local mature cheddar cheeseÂ
Method:
- Heat the oil in a large pan. Add the onion and cook for a few mins to soften. Add the garlic and beef and cook until the meat is browned – break it up with a spoon as it cooks. Â
- Add the tomatoes, oregano, stock cube and ketchup. Season well, stir and cover with a lid. Simmer for 30 mins.Â
- Half the peppers and scoop out the inside. Place cut-side up in air fryer and season and put on max crisp 200C for 15mins. Â
- When the mince is cooked, divide it between the softened peppers. Return to the air fryer for 10 mins, sprinkled with cheese. Â
