These baked stuffed peppers are filled with a savoury quinoa and feta mixture, then roasted to perfection for a healthy, hearty meal.
What you'll need:
- 150g cooked quinoa or rice
- 100g feta cheese, crumbled
- 1 tomato, finely chopped
- 1 garlic clove, minced
- Handful parsley
- Olive oil
Method:
- Mix quinoa, feta, tomato, garlic, and parsley.
- Stuff the pepper halves with the mixture.
- Drizzle with olive oil and bake at 180°C for 20–25 mins.
- Serve warm as a main or side.
