Stuffed Sweet Point Peppers

These baked stuffed peppers are filled with a savoury quinoa and feta mixture, then roasted to perfection for a healthy, hearty meal.

What you'll need:

  • 150g cooked quinoa or rice 
  • 100g feta cheese, crumbled 
  • 1 tomato, finely chopped 
  • 1 garlic clove, minced 
  • Handful parsley 
  • Olive oil 

Method:

  1. Mix quinoa, feta, tomato, garlic, and parsley. 
  2. Stuff the pepper halves with the mixture. 
  3. Drizzle with olive oil and bake at 180°C for 20–25 mins. 
  4. Serve warm as a main or side.
